Im trying to collect our sales from Ebay but its failing due to quite a few of the sales packing partner isnt showing the Address or the shipping method in the sales record.

This is definitely an eBay issue, which is likely to be fixed by eBay before too long.
Retrying collection:
In tests here, I have been able to collect all records by retrying the collection.
If the collecting stalls, click Cancel and then click Retry, this will save having to recollect the successful records.
If you see the failed records dialog, click Retry, eventually all records should be collected
